1 Effect of disruptive customer behaviors on others overall service experience: An appraisal theory perspective

Drawing upon the appraisal theory, this study proposes and tests a conceptual model to delineate customers’ evaluative process of disruptive customer behaviors in a shared service environment (e.g., theme parks, airplanes, restaurants). Using a scenario-based online experiment, two sets of data were collected from U.S. customers and analyzed by a series of regression analyses. Findings suggest that customers go through a systematic evaluative process of primary appraisal (e.g., congruence and relevance) and secondary appraisal (e.g., cognitions and emotions), which results in the development of coping behaviors (e.g., active and passive coping). Cognitions are found to have direct influences on passive and active coping. Perceived powerlessness, perceived betrayal, and perceived identity threat are identified as critical cognitions. Negative emotions are found to result in active coping. Primary appraisal (e.g., congruence and relevance) either directly affects coping behaviors, or indirectly through cognitions and negative emotions. Theoretical and managerial implications are further elaborated.

2 Food Trend Based on Social Media for Big Data Analysis Using K-Mean Clustering and SAW

tracking customer preferences is an important aspect of business success. Having information on hand about most favorite food is a key success for everyone who takes apart in the culinary business. Exact sales data on certain food is hardly available to the public. Restaurant owner tends to keep their data for their own business strategy. Therefore, generating a food trend in a certain community is hardly possible using food sales data. This paper discussed extracting food general trend from social media, with the case study on Twitter data with a certain regional area of interest. Social media provides a tremendous amount of data including people choice of food when they visit the certain place. However, the available data is unstructured in human language. The challenge is twofold: to grasp the meaning and extract the relevant information to the food trends. We proposed a bag of words technique to gather relevant information in the Indonesian language for feature extracting purpose. While K-mean Clustering and Simple Additive Weighting (SAW) algorithm are proposed to draw up the food rank. In order to measure the accuracy, we compare our result with the sales data of some restaurants in Yogyakarta. We test the algorithm using 4 weeks of data, the result is compared against the available data and an accuracy of 72.75 % is achieved

3 Halal culinary and tourism marketing strategies on government websites: A preliminary analysis

In the present study, the use of the internet to promote Halal cuisines and culinary tourism is compared and contrasted through content analysis method of investigation of the national tourism bureaus of China, South Korea, Japan and Thailand on their official websites. It was found that Japan, South Korea and Thailand attempted to strategize their countrys potential as a preferred Halal tourism destination for Muslim tourists by introducing and promoting Halal cuisines, Halal food culture, Halal food restaurants and general Halal services of interest for Muslims. However, the same was not observed in the case of China, which dealt with the issue of religion as an ethnic issue in its culinary tourism strategies. The findings furnished by the present study accommodate both the perspectives of the industry and the research by providing a framework for essential website dimensions for the promotion of Halal culinary tourism and additional Halal services.

4 Is culture of origin associated with more expressions? An analysis of Yelp reviews on Japanese restaurants

Do online reviewers of ethnic restaurants use more elaborate expressions if they are from the culture of origin of those restaurants than otherwise? For instance, do Japanese use more elaborate sentiment expressions in online reviews than North Americans and Europeans (Westerners) when it comes to Japanese restaurants? We examined 76,704 Western and 56,159 Japanese Yelp reviews of 10 popular entrée items – ramen, sushi, tempura, bento, curry rice, fried rice, gyoza, miso soup, soba, and udon – at Japanese restaurants in the West and Japan, respectively. The results indicate that Western reviewers use more elaborate sentiment expressions than Japanese reviewers on the major aspects of restaurant reviews, namely service quality and food quality. However, the differences are smaller for food quality than service quality possibly due to the culture-of-origin effect. In addition, post-hoc analyses show that Japanese reviewers express their sentiments with a greater variety of expression when discussing a restaurants physical environment and price fairness compared with Western reviewers.

5 Risk assessment of halal products and services: Implication for tourism industry
بررسی خطر محصولات و خدمات حلال: دلالت ها برای صنعت گردشگری-2018
This empirical study entailed proposing conceptual models for investigating customers satisfaction, their intention to recommend, and their continued intention to purchase and consume halal products and services. Complexity theory was used to support the developed models. The study applied a symmetrical analysis to investigate the risk factors that are sufficient for affecting the desired outcomes. An asymmetrical approach was used to explore the causal configurations that lead to both high and low outcomes scores. A necessary condition analysis was performed to identify the risk conditions required to achieve the expected outcomes. The models were tested using data collected on the perceptions of patrons at international halal restaurants in Malaysia. According to the results, the heterogeneous interactions of risk conditions support complexity theory. Policy implications for the status of the tourism industry and the Muslim world are discussed at the end of the paper.

6 Using fuzzy DEMATEL in modeling the causal relationships of the antecedents of organizational citizenship behavior (OCB) in the hospitality industry: A case study in the Philippines
استفاده از DEMALTE فازی در مدلسازی روابط علی سوابق رفتار شهروندی سازمانی در صنعت مهمانداری: یک مطالعه موردی در فیلیپین-2018
This paper attempts to identify the antecedents of organizational citizenship behavior (OCB) in the hospitality industry and to determine their causal relationships. As a case study, experts with key positions in top hotels and restaurants in Cebu, Philippines were asked to identify the OCB antecedents they observe and experience in practice. Using fuzzy DEMATEL to understand the causal relationships with imprecise information, organizational commitment emerged as the most prominent antecedent with the highest number of impact, both given and received. Furthermore, human resource practices appeared as the most influential antecedent, which showed a higher degree of causality to the other antecedents. Finally, job satisfaction and employee engagement have the highest number of impacts received which means that they are more dependent on other antecedents in the list. These findings may serve as guidelines in making resource allocation decisions, employee performance evaluation and human resource strategy formulation, among others.

در سالهای اخیر، الگوهای مصرف گردشگری با کاهش طول اقامت شناخته شده اند که سعی کرده است تا ازطریق افزایش هزینه های روزانه گردشگر یا افزایش تعداد گردشگران، اثر آن را خنثی کند. برای درک تاثیر این تغییرات روی صنعت های مسافرتی و مهمانداری، این مقاله یک تحلیل تجزیه ای را بین هزینه شخصی روزانه و طول اقامت گردشگران به عهده گرفته است. جایی که هزینه اتفاق می افتد، ازطریق تمایز بین هزینه های اقامتی و غیر اقامتی، و دسته های مختلف هزینه ای شامل هزینه های سرگرمی و تفریح، رستوران ها، حمل و نقل، گردش، هدایا و سوغاتی ها و هزینه های غذا و نوشیدنی در فروشگاهها در تحلیل تجزیه ای مدنظر قرار می گیرند. هدف از نتایج، شناسایی دسته های مختلف گردشگران می باشد که روی طول اقامت و هزینه های روزانه گردشگر تاثیرات مختلف قابل انتظاری را دارند، یک نتیجه ای که می تواند برای اهداف مدیریت گردشگری جال توجه باشد.

این پژوهش به بررسی گزارشات مربوط به مهمان نوازی و بررسی اثرات مستقیم و غیرمستقیم انواع فرهنگ سازمانی بر گرایش و عملکرد بازار در صنعت رستوران می پردازد. پرسشنامه ساختار یافته برای بررسی صاحبان / مدیران رستوران های مستقل در ایالات متحده مورد استفاده قرار گرفت. تأثیر مستقیم انواع فرهنگ های حمایتی و نوآورانه بر عملکرد شرکت تایید شد. علاوه بر این، MO تا حدی تأثیر مثبت و مستقیم فرهنگ نوآورانه سازمانی بر عملکرد شرکت را مطرح کرد. نتایج بدست آمده توسط ما همچنین تأیید می کند که نوع فرهنگ سازمانی نوآورانه و حمایت کننده، پیش بینی کننده های مهم MO هستند و آنها نیز پیش بینی کننده عملکرد بهتر نسبت به MO هستند. یافته ها باید طرح های سازمانی و گزینه های بازاریابی در دسترس را برای کسب و کارهای رستوران ارتقاء دهند و راهنمایی هایی را برای مدیران ایجاد کنند و سعی کنند در شکل گیری فرهنگ سازمانی و رفتارهای مرتبط با اجرای MO برای بهبود عملکرد نقش ایفا کنند.

9 What makes tourists feel negatively about tourism destinations? Application of hybrid text mining methodology to smart destination management

Recently, the Internet has brought a big change in tourists behavior patterns. Travelers not only reserve hotels and airline tickets online, but also exchange travel information and descriptions of pleasant or unpleasant travel experiences through online review sites and personal travel blogs. In spite of the increasing use of online channels, application of online text data has been limited since the volume of the data set is too large to analyze manually and comprehensively. With recent technological advances in processing big data online, consumer generated information can be automatically analyzed by artificial intelligence. As an aspect of smart tourism, this study applied the sentiment analysis method to analyze travelers online re views of Paris. A total of 19,835 pieces of review data collected from a traveler review site (www.virtualtourist. com) were processed. All reviews were grouped into 14 categories as follows: overview, restaurants, sightseeing, hotels, things to do, night life, transportation, shopping, sporting & outdoors, favorites, off the beaten path, what to pack, tourist traps, warnings and danger, and local customs. Tourists perception about the service in each cat egory was successfully measured, and as an illustration, we chose “transportation” category that reported rela tively low level of service quality for post-hoc analysis to reveal why tourists feel negatively about the transportation service.

10 Robust optimization on sustainable biodiesel supply chain produced from waste cooking oil under price uncertainty
بهینه سازی قوی در زنجیره تامین بیودیزل پایدار در شرایط عدم اطمینان از قیمت تولید از روغن پسماند رستوران-2017
Waste cooking oil (WCO)-for-biodiesel conversion is regarded as the ‘‘waste-to-wealthy” industry. This paper addresses the design of a WCO-for-biodiesel supply chain at both strategic and tactical levels. The supply chain of this problem is studied, which is based on a typical mode of the waste collection (from restaurants’ kitchen) and conversion in the cities. The supply chain comprises three stakeholders: WCO supplier, integrated bio-refinery and demand zone. Three key problems should be addressed for the optimal design of the supply chain: (1) the number, sizes and locations of bio-refinery; (2) the sites and amount of WCO collected; (3) the transportation plans of WCO and biodiesel. A robust mixed integer linear model with muti-objective (economic, environmental and social objectives) is proposed for these problems. Finally, a large-scale practical case study is adopted based on Suzhou, a city in the east of China, to verify the proposed models.
