1 MagLoc : A magnetic induction based localization scheme for fresh food logistics

An IoT infrastructure to continuously monitor the fresh food supply chain can quickly detect food quality and contamination issues and thereby reduce costs and food wastage. This, in turn, involves several challenges including the development of inexpensive quality/contamination sensors to be deployed in a fine grain manner in the food boxes, technologies for sensor level communications, online data management and analytics, and logistics driven by such analytics. In this paper, we study the issues related to the communication among sensing modules deployed in the fresh food boxes and thereby an automated localization of the boxes that may have quality/contamination issues. In this context we study the near-field magnetic induction (NFMI) based communication and localization, as the ubiquitous RF communications suffer high attenuation through the water/mineral rich tissue media. An accurate localization of the sensors inside boxes within the food pallets is very challenging in this environment. In this paper we propose a novel magnetic induction based localization scheme, and show that with a small number of anchor nodes, the localization can be done without any errors for boxes as small as 0.5 meter on the side, and with small errors even for boxes half as big.

2 Environmental hotspots analysis: A systematic framework for food supply chains and implementation case in the UK poultry industry

Environmental sustainability analyses of end-to-end food supply chain (SC) operations need to be per- formed regularly to accommodate reconfiguration opportunities arising in the global business landscape. This research scrutinises the pertinent literature and identifies the challenges of data availability, data obsolescence, computational complexity, and data specificity that associate to well-established environmental assessment methodologies, and proposes a stepwise approach that considers key players and processes for generating “close to real-time snapshots” of the main environmental hotspots for the focus firm. The applicability of the proposed systematic approach is demonstrated via an implementation at a resource-intensive sector of significant scale, i.e., the UK poultry industry. Overall, this research con- tributes to the SC environmental sustainability management domain by guiding the mapping and identification of environmental hotspots across end-to-end networks of operations in the form of a stepwise framework, and through articulating several research propositions.© 2021 Elsevier Ltd. 3 A social participatory allocation network method with partial relations of alternatives and its application in sustainable food supply chain selection

Choosing a good food supply chain is helpful for realizing the coordination of economic benefits and environmental optimization, so as to promote the sustainable development of the society. To solve such a problem, we need to ensure the accuracy of the original information and the validity of the aggregated information. However, experts may not be able to give professional evaluations in some aspects, and a simple ranking of alternatives cannot accurately reflect the relations between alternatives. To solve these problems, this paper proposes a comprehensive method integrating the social participatory allocation network (SPAN) and ORESTE methods under the q-rung orthopair fuzzy environment. To better deal with the imprecise and uncertain information, the q-rung orthopair fuzzy set is adopted in this study to represent decision-makers’ opinions. The delegate mechanism of the SPAN method is introduced to calculate the weights of experts, which make the assessments of alternatives credible. The ORESTE method is used to explore the relations between alternatives in detail. The preference function is used to deal with the case where the data is not ordinal. Finally, a case study concerning the selection of sustainable food supply chains is presented to verify the applicability of the proposed method.© 2021 Elsevier B.V. All rights reserved.

4 Evolving challenges and strategies for fungal control in the food supply chain

Fungi that spoil foods or infect crops can have major socioeconomic impacts, posing threats to food security. The strategies needed to manage these fungi are evolving, given the growing incidence of fungicide resistance, tightening regulations of chemicals use and market trends imposing new food-preservation challenges. For example, alternative methods for crop protection such as RNA-based fungicides, biocontrol, or stimulation of natural plant defences may lessen concerns like environmental toxicity of chemical fungicides. There is renewed focus on natural product preservatives and fungicides, which can bypass regulations for ‘clean label’ food products. These require investment to find effective, safe activities within complex mixtures such as plant extracts. Alternatively, physical measures may be one key for fungal control, such as polymer materials which passively resist attachment and colonization by fungi. Reducing or replacing traditional chlorine treatments (e.g. of post-harvest produce) is desirable to limit formation of disinfection by-products. In addition, the current growth in lower sugar food products can alter metabolic routing of carbon utilization in spoilage yeasts, with implications for efficacy of food preservatives acting via metabolism. The use of preservative or fungicide combinations, while involving more than one chemical, can reduce total chemicals usage where these act synergistically. Such approaches might also help target different subpopulations within heteroresistant fungal populations. These approaches are discussed in the context of cur- rent challenges for food preservation, focussing on pre-harvest fungal control, fresh pro- duce and stored food preservation. Several strategies show growing potential for mitigating or reversing the risks posed by fungi in the food supply chain.ª 2021 The Author(s). 5 Uncovering research streams on agri-food supply chain management: A bibliometric study

This study carried out a bibliometric analysis to critically review the evolution of the agri-food supply chain (AFSC) research field over the period of 2008–2019. A set of 1236 articles was analyzed from the Web of Science database. Besides using different analytical scientometric tools (topic mapping, co-citation, co-authorship and overlay visualization networks), this study identified frequently-used keywords, new and hot research topics and frequently-studied supply chain management (SCM) practices. Frequently used keywords are food supply chain, food waste, sustainability, food safety, SCM, food industry, and food security. New research themes include contract, blockchain, internet of things, resilience, and short food supply chain, a topic that demands further research especially due to the international COVID-19 pandemic and the need of farmers to be closer to the consumers. Hot research topics, that is, subjects that have been studied in highly cited papers were also identified include life cycle assessment, environmental impact, packaging, water use, food waste prevention, food waste generation, blockchain and carbon footprint. Among SCM practices, this study observed that risk and sustainable SCM are frequently used keywords. Procurement and reverse logistics were observed in fewer studies. SCM, food waste, food quality, GHG emissions and risk management are sustainable SCM practices frequently observed.

6 Exploring the feasibility of introducing electric freight vehicles in the short food supply chain: A multi-stakeholder approach

The transition towards more sustainable approaches in the Food Supply Chain was concretely visible in the implementation of alternative models, like the Short Food Supply Chain. Some authors raise doubts on the environmental impact of this model, in particular for the externalities caused by the transport system, suggesting the adoption of Electric Freight vehicles. By adopting a multi-stakeholder approach, the objective of this study is to explore both the barriers and potentialities involved in the adoption of Electric Freight vehicles in the Short Food Supply Chain, and the existence of a shared strategy at the system level able to foster their adoption. Results suggest that, for entrepreneurs, Electric Freight vehicles appear as a viable option, although more efforts are still needed at a governmental level, through the promotion of public measures in the form of support for purchasing costs or rental rate and offering technical expertise services. In terms of infrastructures, as is clear from interviews, improving the charging infrastructure efficiency to ensure EFVs shift optimization and increasing the number of charging points are today a priority. On the whole, more collaborative methods should be inaugurated, contributing to a shared vision of urban mobility which takes into account all supply chain actors (charging point operators, automotive industry, rental car services, farmers, and local authorities) to ensure the system works in a more efficient way.

7 Disruption in food supply chain and undernourishment challenges: An empirical study in the context of Asian countries

Undernourishment and associated health issues are some mammoth challenges that the world currently faces. The poorly design food supply chain (FSC) is considered a root cause of high undernourishment cases worldwide. Since all processes and stages in a supply chain are strongly connected, a slight delay or glitch can trigger a butterfly effect resulting in significant socio-economic losses. The FSC is vital to providing human essentials and a source of bread earning; rank at the top in global industries and any disturbance results in high unemployment and leading social evils like crime and violence in society. Recognize the same; this study examines the impact of food supply chain disruption on undernourished cases in selected Asian countries. Using Generalized Methods of Moments (GMM) estimator, this study provides two key findings. First, a higher intensity of COVID-19 cases translates into higher undernourishment due to direct and indirect effects from higher stringency measures. Secondly, government financial allocations to combat COVID-19 and economic growth significantly mitigate the prevalence of undernourishment. Interestingly, a higher crime index is linked with higher undernourished cases supporting the proposition of socio-economic disorder. These results propose broad policy implications for governments, food regulatory authority, donor agencies, and Non-Governmental Organizations by strengthening the food supply chain and thus reduces undernourishment cases.

8 Environmental impacts of animal-based food supply chains with market characteristics

Animal-based food supply chains lead to significant environmental impacts, which can be influenced by production systems, distribution networks and consumption patterns. To develop strategy aimed at reducing the environmental impact of animal-based food supply chains, the common environmental hotspots among different types of food, the role of transport logistics and the consequence of end market need to be better understood. Life cycle assessment was adopted to model three types of animal-based food chains (beef, butter and salmon), with specific technologies, high spatial-resolution logistics and typical consumption patterns for three markets: local, regional (intra-European) and international. The results confirmed that the farm production stage usually had the greatest environmental impact, except when air transport was used for distribution. Potentially, the role of end market also can significantly influence the environmental impacts. To understand more, three improvement options were examined in detail with regard to hotspots for climate change: novel feed ingredients (farm production stage), sustainable aviation fuel (transport and logistics stage) and reduction of wasted food (consumption and end of life stage). Significant reduction was achieved in the salmon system by sustainable aviation fuel (64%) and novel feed (15%). Minimizing food waste drove the greatest reduction in the beef supply chain (23%) and the international butter supply chain can reduce 50% of GHG mission by adopting sustainable aviation fuel. Combined interventions could reduce GHG emission of animal-based food supply chains by 15% to 82%, depending on market, transport and food waste behaviour. The results show that ecoefficiency information of animal-based foods should include the full supply chain. The effective mitigation strategy to achieve the greatest reduction should not only consider the impacts on-farm, but also detail of the downstream impacts, such as food distribution network and consumption patterns.

9 Impact of information hiding on circular food supply chains in business-to-business context

This study has analyzed food supply chains from the circular economy viewpoint with a focus on knowledge hiding. In this paper, we examine the practice of hiding knowledge among stakeholders, in which dimension, what this knowledge is and whether there are differences among specific groups of stakeholders. This is applied to distributors, producers, consumers, retailers, suppliers and farmers working within the meat industry in Turkey. It shows how information hiding affects the traceability of food supply chains and circularity in the meat industry. Three different theories have been examined in this paper. Stakeholder theory helps to analyze traceability of food supply chains among stakeholders; the theory of industrial symbiosis aims to achieve an efficient circular food supply chain through 9R (refuse, rethink, reduce, reuse, repair, refurbish, remanufacture, repurpose, recycle, recover) strategies by adopting traceability; the information theory is a key enabler to co- ordinate traceability from farm to fork to support a circular food supply chain. By using the theoretical lens, this paper sets out proposals for policymakers and managers in food supply chains to ensure traceability and transparency to achieve circular economy. Although some prior studies address knowledge hiding, information hiding hasn’t been examined with traceability and transparency dimensions in Circular Food Supply Chain(CFSC) in B2B business. This study attempts to fill this gap in the literature, improve theoretical understanding with our proposed framework and validating the impact of information hiding and reveal where knowledge is mostly hidden in terms of circular economy, stakeholders and 9Rs in the meat industry. A proposed framework for managers and policymakers based on a circular economy can bring social, economic and environmental benefits for the red meat industry in Turkey. Additionally, it offers a framework and recommendations for other countries and industries for possible adoption.

10 Introducing an aflatoxin-safe labeling program in complex food supply chains: Evidence from a choice experiment in Nigeria

Food contaminated with aflatoxins is one of the more prominent food safety issues facing developing countries. These toxins impose an immense burden on countries that have to deal with the repercussions of the contamination. Repercussions include increased public health concerns, increased health care expenditures, and other economic tolls. To alleviate these food safety concerns, the implementation of aflatoxin-safe certification can potentially incentivize and elevate food safety standards. This study uses a discrete choice experiment approach to assess if traders are willing to pay a price premium for aflatoxin-safe maize and whether such a premium varies across their market channels. Results indicate that maize traders who sell to other traders, large feed mills, food companies, and retailers exhibit a higher willingness to pay (WTP) for aflatoxin-safe certification compared to those who sell to small feed mills and consumers. Relevant policy implications are discussed.
