1 Prediction of total volatile basic nitrogen (TVB-N) and 2-thiobarbituric acid (TBA) of smoked chicken thighs using computer vision during storage at 4 °C

As the traditional indicators of freshness measurement of meat products, TVB-N and TBA have the disadvantage of time-consuming, labor-intensive and destructive to the sample. The objective of this study was to investigate the possibility of computer vision techniques to visualize the variation of TVB-N and TBA during the storage of smoked chicken thighs. In this study, freshness indicators (TVB-N and TBA) and images of smoked chicken thighs were obtained simultaneously every 3 days during storage at 4 ◦C. Then, the RGB color space was converted to HSI and L*a*b* color spaces by color conversion algorithm, and the color parameters (RGB, HSI and L*a*b*) were correlated with TVB-N and TBA, respectively, for establishing multiple regression models. Finally, visu- alization maps of the spoilage were established by applying the multiple regression model to each pixel in the image. The results showed that the multiple linear regression models of TBA and TVB-N based on the color parameters L*, a*, I, S and R were well correlated (R 2 = 0.993 for TBA and R 2 = 0.970 for TVB-N). Distribution maps of TBA and TVB-N changed color gradually from blue to red during storage, respectively. In conclusion, this study demonstrated that distribution maps can be employed as a rapid, objective, and non-destructive method to predict the TBA and TVB-N values of smoked chicken thighs during storage.

2 Human perception of color differences using computer vision system measurements of raw pork loin

In the food industry, product color plays an important role in influencing consumer choices. Yet, there remains little research on the human ability to perceive differences in product color; therefore, preference testing is subjective rather than based on quantitative colors. Using a de-centralized computer-aided systematic discrim- ination testing method, we ascertain consumers’ ability to discern between systematically varied colors. As a case study, the colors represent the color variability of fresh pork as measured by a computer vision system. Our results indicate that a total color difference (ΔE) of approximately 1 is discriminable by consumers. Furthermore, we ascertain that a change in color along the b*-axis (yellowness) in CIELAB color space is most discernable, followed by the a*-axis (redness) and then the L*-axis (lightness). As developed, our web-based discrimination testing approach allows for large scale evaluation of human color perception, while these quantitative findings on meat color discrimination are of value for future research on consumer preferences of meat color and beyond.

3 Pork primal cuts recognition method via computer vision
روش تشخیص برش های اولیه گوشت خوک از طریق بینایی کامپیوتری-2022
Pork accounts for more than 33% of global meat consumption and dominates meat consumption in China. With the improvement of peoples quality of life, people pay more and more attention to the quality of pork. There are many factors that affect the quality of pork, and the cutting position of pork is also one of them. The quality of different pork primal cuts varies greatly. Aiming at the difficulty of distinguishing pork primal cuts, this study proposes a computer vision-based method to identify different pork primal cuts, using images of four different pork primal cuts (ham, loin, belly, and neck) as the experimental data, the results show that the method proposed in this paper can identify the original cuts of pork well. It also proves that computer vision technology has the potential to help people identify pork cuts.

4 The application of computer vision systems in meat science and industry – A review

Computer vision systems (CVS) are applied to macro- and microscopic digital photographs captured using digital cameras, ultrasound scanners, computer tomography, and wide-angle imaging cameras. Diverse image acquisi- tion devices make it technically feasible to obtain information about both the external features and internal structures of targeted objects. Attributes measured in CVS can be used to evaluate meat quality. CVS are also used in research related to assessing the composition of animal carcasses, which might help determine the impact of cross-breeding or rearing systems on the quality of meat. The results obtained by the CVS technique also contribute to assessing the impact of technological treatments on the quality of raw and cooked meat. CVS have many positive attributes including objectivity, non-invasiveness, speed, and low cost of analysis and systems are under constant development an improvement. The present review covers computer vision system techniques, stages of measurements, and possibilities for using these to assess carcass and meat quality.

5 Mapping foodborne pathogen contamination throughout the conventional and alternative poultry supply chains

Recently, there has been a consumer push for natural and organic food products. This has caused alternative poultry production, such as organic, pasture, and free-range systems, to grow in popularity. Due to the stricter rearing practices of alternative poultry production systems, different types of levels of microbiological risks might be present for these systems when compared to conventional production systems. Both conventional and alternative production systems have complex supply chains that present many different opportunities for flocks of birds or poultry meat to be contaminated with foodborne pathogens. As such, it is important to understand the risks involved during each step of production. The purpose of this review is to detail the potential routes of foodborne pathogen transmission throughout the conventional and alternative supply chains, with a special emphasis on the differences in risk between the two management systems, and to identify gaps in knowledge that could assist, if addressed, in poultry risk-based decision making.

6 A life cycle sustainability assessment of organic and conventional pork supply chains in Sweden

Most existing life cycle assessment studies that have compared the sustainability of organic and conventional pork supply chains are environmental assessments. The economic and social sustainability dimensions of pork supply chains are currently under-researched. The study reported here was designed to assess the environmental, economic and social sustainability of conventional and organic pork in Sweden. Life Cycle Sustainability Assessment was undertaken using 20 indicators expressed per unit product (1000 kg pork fork weight) and per unit area (1000 ha of farmland) for the four main subsystems in pork supply chains: (1) farm and feed production, (2) slaughter, (3) wholesaling and retailing, and (4) consumption. The organic pork supply chain out-performed the conventional chain in 11 of the 20 indicators expressed per unit product and 18 of the 20 indicators expressed per unit area. It was therefore the more sustainable of the two chains in nearly all the indicators expressed per unit area. However, the organic supply chain was less sustainable in some of the indicators expressed per unit product because, more feed per kg of pork was required in organic pork production. Pig welfare improvement leads to higher production costs and environmental impacts. Assessment of all three sustainability dimensions – environmental, economic and social – helps to identify trade-offs between these three pillars of sustainability. However, the selection of indicators influences results, and obtaining environmental, economic and social data simultaneously is challenging.

7 Impact of information hiding on circular food supply chains in business-to-business context
تأثیر مخفی کردن اطلاعات بر روی زنجیره های تأمین مواد غذایی دایره ای در زمینه کسب و کار به تجارت-2021
This study has analyzed food supply chains from the circular economy viewpoint with a focus on knowledge hiding. In this paper, we examine the practice of hiding knowledge among stakeholders, in which dimension, what this knowledge is and whether there are differences among specific groups of stakeholders. This is applied to distributors, producers, consumers, retailers, suppliers and farmers working within the meat industry in Turkey. It shows how information hiding affects the traceability of food supply chains and circularity in the meat industry. Three different theories have been examined in this paper. Stakeholder theory helps to analyze traceability of food supply chains among stakeholders; the theory of industrial symbiosis aims to achieve an efficient circular food supply chain through 9R (refuse, rethink, reduce, reuse, repair, refurbish, remanufacture, repurpose, recycle, recover) strategies by adopting traceability; the information theory is a key enabler to co- ordinate traceability from farm to fork to support a circular food supply chain. By using the theoretical lens, this paper sets out proposals for policymakers and managers in food supply chains to ensure traceability and transparency to achieve circular economy. Although some prior studies address knowledge hiding, information hiding hasn’t been examined with traceability and transparency dimensions in Circular Food Supply Chain(CFSC) in B2B business. This study attempts to fill this gap in the literature, improve theoretical understanding with our proposed framework and validating the impact of information hiding and reveal where knowledge is mostly hidden in terms of circular economy, stakeholders and 9Rs in the meat industry. A proposed framework for managers and policymakers based on a circular economy can bring social, economic and environmental benefits for the red meat industry in Turkey. Additionally, it offers a framework and recommendations for other countries and industries for possible adoption.

8 Computer vision techniques on magnetic resonance images for the non-destructive classification and quality prediction of chicken breasts affected by the White-Striping myopathy

This study was designed to assess the capability of MRI-computer vision algorithms, as a non-destructive technique, to classify and predict quality characteristics of chicken breast affected by White-Striping (WS) myopathy. Samples showing moderate and severe degrees of the myopathy were analyzed together with normal samples (no WS symptoms). The influence of the computational algorithms to analyze the MRI images and the techniques of data analysis on the classification and prediction results was aimed. Computational features from both texture (GLCM) and fractal (OPFTA) algorithms were useful to i) classify WS chicken breast by means of different classification technique, Principal Component Analysis and Decision Tree, and ii) predict physico-chemical characteristics of these chicken breast with high accuracy, applying Multiple Linear Regression. The results show the feasibility of objectively classifying chicken breasts without sample destruction into two degrees of severity. This is of remarkable relevance in large processing plants where WS incidence is high and a quick decision-making is required for the fate of affected samples.

9 Management strategies, silvopastoral practices and socioecological drivers in traditional livestock systems in tropical dry forests: An integrated analysis
استراتژی‌های مدیریت، شیوه‌های سیلووپاستورال و محرک‌های اجتماعی-اکولوژیکی در سیستم‌های دام سنتی در جنگل‌های خشک استوایی: یک تحلیل یکپارچه-2021
Understanding traditional livestock management is essential in the design of more sustainable systems, given the forest loss associated to the growing demand for meat. In Latin America, where extensive livestock production is increasing, along with tropical dry forest (TDF) transformation, the role of small holders is critical for designing more sustainable management practices. This study is an integrated socioecological analysis of traditional li- vestock systems in a region with TDF in Mexico. The objectives were to: a) characterise the historical devel- opment and current state of livestock systems and silvopastoral practices, b) define the management strategies and their impacts on forests, and c) identify the regional and local socioecological drivers that influence decision- making processes in livestock and forest management. In-depth interviews were carried out to 32 cattle farmers and analysed using a qualitative-interpretative approach which included multivariate and narrative analyses. Three historical stages (colonization, promotion of livestock and forest conservation) had a strong impact in the development and current state of livestock systems. Access to natural and economic resources and proportion of plant cover (grassland/forest) were essential in defining four groups of management strategies. The main re- gional drivers favouring or restricting production include climate, native vegetation, markets and public policies; at the local scale, socioecological factors, such as water availability, native vegetation, economic assets, local knowledge and their interactions determine heterogeneity in management strategies, decision-making processes and their impacts on forests. Adaptive management of livestock and forests in a context of limited economic resources has allowed the conservation of forest areas and the use of silvopastoral practices with local tree species. The integrated socio-ecological approach and the use of mixed methods allowed a better understanding of drivers and their interrelationships, the local knowledge, objectives and perceptions of farmers in the decision- making processes regarding livestock and forest management. Perspectives of farmers on resource use can contribute to the design of more effective and inclusive policies for sustainable livestock systems in the dry tropics.

10 Internal benchmarking to assess the cost efficiency of a broiler production system combining data envelopment analysis and throughput accounting

Economic efficiency assessments based on Data Envelopment Analysis are scarce compared to technical effi- ciency studies, even in for-profit firms. Some aspects justify this scarcity, such as the difficulty to estimate ac- curate prices, given their variability over time. In many situations, external benchmarking is hindered due to organizations’ unique nature and the barriers to sharing information considered critical to competitiveness. The use of internal benchmarking can overcome some of these difficulties. This study conducted an internal benchmarking analysis of a broiler production system, focusing on cost efficiency. We conducted longitudinal case-based research over six years (2014–2019). The concepts of throughput accounting of the Theory of Con- straints were applied to structure the DEA model (inputs, prices, and output). The Critical Incident Technique was used to explore the effects of interventions on the production system’s cost efficiency. The results show that the broiler production system could reduce 32% of the total cost per unit of production if the balance of inputs suggested by the DEA evaluation was used. This work contributes to the literature by showing the potential of internal benchmarking to explore the evolution of cost efficiency over time. From a practical perspective, this study is important for managers by showing how to measure the impact of management actions on performance, providing valuable information to guide continuous improvement.
